Baked Haddock with Chick Peas, Black Olives and Sun Dried Tomatoes
Ingredients:
- � lb Haddock fillets - rinsed and drained
- � cup Kalamata Olives - pitted and halved
- � cup sun-dried tomatoes - cut into small pieces
- 1 small onion - sliced and separated into rings
- 1 small can of chick peas - drained
- Olive Oil
- Salt
- Penzey’s Florida Seasoned Pepper
- Crushed red pepper
- Fresh Cilantro leaves - coarsely chopped
Directions:
- Pre-heat oven to 350� F
- Spray baking dish and fillets with Olive oil
- Arrange fillets in dish in a single layer
- Sprinkle fish with a little salt and seasoned pepper
- Cover evenly with chick peas, olives, tomatoes and onions
- Sprinkle crushed red pepper and more seasoned pepper evenly over everything
- Drizzle or spray Olive oil evenly on top
- Bake for 15 - 20 miuntes
- Garnish with Cilantro leaves before serving
