Beet Arugula Feta Salad
Ingredients:
Directions:
- wash beets, boil and remove skin when tender
- cut beets into small cubes or triangles
- crumble feta and set aside
- chop toasted pecans
- mix olive oil, red wine vinegar and applejuice
- toss together beets, arugula, pecans and dressing
- immediately before serving, sprinkle crumbled feta on top of the salad
