Lynnette’s Vegetarian Chili
Serves 6-8
Ingredients:
- 1 large onion, diced
- 1 large green bell pepper, diced
- 3 cloves garlic, minced, and “rested” for 10 minutes
- 2 cans diced tomatoes with green chilies (or, with jalapenos)
- 1 can petite diced tomatoes
- 1 small can V-8
- 1 can black beans, rinsed
- 1 can dark red kidney beans, rinsed
- 1 can pinto beans (or soy beans), rinsed
- 1 bay leaf
- 1 small can yellow corn
- 1 T chili powder
- 1 tsp chipotle chili
- 1 tsp cumin
- 1 tsp Mexican oregano
- ½ cinnamon (opt)
