Special Pancakes
Wheat free, sugar free and fat free (Or, don’t make it fat free, but don’t slop margerine on it either, instead, sprinkle a tablespoon of flaxseed meal atop the pancakes and fit in your Omega 3’s and lignins).
Ingredients:
- 1/2 cup oat bran
- 1 small banana (4 oz)
- 4 ounces blueberries
- 2 T cinnamon
- 1 T baking powder
- Water to taste
- Aerosol-free cooking spray
- 1/2 cup unsweetened organic soy milk
- 1/2 cup organic skim milk
- 2 ounces organic, fairly traded espresso (I buy it at my food co-op and make it on my stove top in a french pot, often they can purchased for less than $10 at nice kitchen stores)
- Optional: Stevia and more cinnamon to taste
Directions:
- Mix oatbran with cinnamon and baking powder, add water until you reach the pancake consistancy you desire. Slice banana and add to the mix.
- Spray frying pan with cooking spray, pour pancakes (makes four small ones).
- Heat blueberries, add one package of stevia or leave them plain and natural. Pour blueberries on top for an antioxident-packed natural “syrup.”
- Brew espresso. Heat milk. Pour together. I add two packages of Stevia and sprinkle with cinnamon, or, sometimes, sugar-free cocoa.
- Dietary Exchange: 2 fruits, 2 1/2 starch, 1 dairy and, if you add the flaxseed meal, 1/2 fat.
