Way-Too-Easy! Black Bean Soup
As it says above, this recipe is way to easy! I really hope you enjoy it. I know I do, because I do not always have time to soak and boil the beans.
Ingredients:
-
2 cans of whole black beans - rinsed.
-
5 cans of water (use the cans the beans came in).
-
1/4 cup of diced onions
-
1/4 cup of green bell pepper
-
1/2 tsp of minced or crused garlic.
-
Salt and pepper, and your favorite all purpose seasoning to taste.
-
Dash or two of cayenne pepper - if you want a little kick!
Garnish - optional
-
1/2 cup of cilantro
-
1/2 cup of green onions
-
At least 5 corn tortillas (I use the store bought). Cut them into strips, put them in a baking pan and bake until nice and crispy. Or, you can fry them in a little olive oil or canola oil until crispy.
