Wild and Easy Spanish Rice
Ingredients:
- One cup of rice (white or arborio with wild) (250ml)
- One can of diced tomatoes (454ml)
- One roughly diced large white onion
- Low fat Parmesan cheese
- Black Pepper
- Chopped Fresh Garlic
- Chopped Fresh Basil or dried oregano
- Grated low-fat mozzarella cheese
Directions:
- Heat large saute pan or wok to medium and brown onions for 4 minutes
- Pour juice from can of tomatoes into measuring cup then fill to 2 cups with water or chicken/vegetable stock (500ml)
- Add liquid and tomato can contents to onions
- Add cup of rice
- Add Parmesan cheese and black pepper.
- Cook for about 15 minutes on medium low or until all liquid is absorbed by rice
- Add herbs near end to retain texture
- Sprinkle grated cheese on top of rice before serving
