Cinnamon Chicken with Sweet Potatoes

- Preheat oven to 400. Place chicken breast and cubed sweet potato together in baking dish. Bake covered with foil for 30 minutes or until done.
- While chicken and potatoes are baking, Healthy Saut� onion in medium saucepan over medium low heat for about 5 minutes stirring frequently. Add garlic and continue to saut� for another minute. Add stock, orange rind, cinnamon stick, and cloves and bring to a boil on high heat. Reduce heat and simmer for 15 minutes.
- Strain broth and add apricots, prunes and chopped walnuts and cook for another 5 minutes.
- When chicken and potatoes are done place on plate and top with broth and dried fruit and walnuts. Serve sprinkled with chopped parsley. Serves 2 For optimum flavor and nutrition serve with: Marinated Beets / omit dill
