Cinnamon Chicken with Sweet Potatoes

  1. Preheat oven to 400. Place chicken breast and cubed sweet potato together in baking dish. Bake covered with foil for 30 minutes or until done.
  2. While chicken and potatoes are baking, Healthy Saut� onion in medium saucepan over medium low heat for about 5 minutes stirring frequently. Add garlic and continue to saut� for another minute. Add stock, orange rind, cinnamon stick, and cloves and bring to a boil on high heat. Reduce heat and simmer for 15 minutes.
  3. Strain broth and add apricots, prunes and chopped walnuts and cook for another 5 minutes.
  4. When chicken and potatoes are done place on plate and top with broth and dried fruit and walnuts. Serve sprinkled with chopped parsley. Serves 2 For optimum flavor and nutrition serve with: Marinated Beets / omit dill
